- 1 cup ripe mango purée (from about 2 ripe mangoes)
- 1 cup desiccated coconut (plus extra for rolling)
- ½ cup sweetened condensed milk
Instructions
- Prepare the mango purée by scooping out the pulp from ripe mangoes and blending until smooth. Set aside 1 cup.
- In a nonstick pan over low heat, toast 1 cup of desiccated coconut for about 1 minute until fragrant.
- Add the mango purée and sweetened condensed milk to the toasted coconut in the pan. Stir well and cook on medium heat for 5–7 minutes until thickened into a dough-like consistency.
- Allow the mixture to cool slightly, then scoop out tablespoon-sized portions and roll them into smooth balls.
- Roll each ball in extra desiccated coconut for an appealing finish and store in an airtight container in the refrigerator.
