- 3/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract

Instructions
- Preheat your oven to 350º F (175º C).
- In a stand mixer, cream together the softened butter and sugars until fluffy. Add the egg and vanilla extract.
- In a separate bowl, combine flour, cornstarch, baking soda, and salt; gradually mix into the wet ingredients until just combined.
- Fold in 1 1/2 cups of M&M's.
- Scoop golf ball-sized portions onto a parchment-lined baking sheet and press in remaining M&M's on top.
- Chill the dough for at least 30 minutes before baking for optimal thickness.
- Bake for 10-11 minutes until edges are set but centers remain slightly soft.
- Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack.
