Instructions
- In a mixing bowl, combine shredded coconut, almond butter, honey, and vanilla extract until smooth.
- Fold in chopped almonds until evenly mixed.
- Scoop small portions of the mixture and roll into balls about one inch in diameter; place on a parchment-lined baking sheet.
- Refrigerate for 30 minutes to firm up.
- Melt dark chocolate chips in short bursts in the microwave until smooth.
- Dip each chilled truffle into melted chocolate using a fork; let excess drip off and return to parchment.
- Optionally garnish with finely chopped parsley while chocolate is still wet.
- Allow to set at room temperature or refrigerate briefly until hardened.
