- 3 cups almond flour
- 1 cup rolled oats
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 2 tablespoons nut milk
- 3 cups blackberries
- 1/4 cup honey
- 1 tablespoon corn starch
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, oats, melted coconut oil, maple syrup, nut milk, vanilla, and sea salt. Mix until crumbly.
- Reserve 1 cup of the mixture; press the rest into an 8-inch springform pan to form the crust.
- Bake crust for 10 minutes until lightly golden.
- In a saucepan, combine blackberries, shredded coconut, corn starch, sea salt, honey, and water; bring to a boil then simmer for 10-15 minutes until soft.
- Pour blackberry filling into crust and sprinkle with reserved crumble mixture.
- Bake for another 10 minutes until golden brown.
- Cool for at least 20 minutes before slicing and serving.
