- 2 cups digestive cookies or graham crackers
- ½ cup melted butter
- 3 cups fresh apple cider
- 3 bricks cream cheese
- 1 cup brown sugar
- 1 cup sour cream
- 3 large eggs

Instructions
- Reduce apple cider with mulling spices by boiling until thickened to about 1/3 cup and cool.
- Preheat oven to 350°F (175°C) and prepare crust by blending cookie crumbs, butter, salt, and powdered sugar; press into springform pan and bake for 10 minutes.
- Lower oven temperature to 325°F (160°C). In a stand mixer, blend cream cheese and brown sugar until smooth; mix in sour cream, vanilla, salt, cinnamon, and reduced cider.
- Gradually add eggs and flour; pour filling into cooled crust.
- Bake in water bath for approximately 90 minutes until edges are set.
- Cool gradually inside the oven before chilling in the refrigerator for at least 8 hours.
