Instructions

- In another bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
- Combine wet and dry ingredients without overmixing; a few lumps are okay.
- Fold in the diced apples gently.
- If desired, let the batter rest for 5-10 minutes for fluffier pancakes.
- Heat a lightly oiled griddle over medium heat.
- Pour about ¼ cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface (about 2-3 minutes) then flip and cook until golden brown (another 2-3 minutes).
- Keep warm in an oven set to low if needed.
