  • 3/4 cup unsweetened applesauce, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup unsalted butter, softened to room temperature for filling
  • 4 cups confectioners’ sugar
  • 1/2 teaspoon ground cinnamon for filling
  • 1/8 teaspoon ground nutmeg for filling
  • 1/8 teaspoon ground ginger for filling
  • 3 Tablespoons apple cider for filling
  • 1 teaspoon pure vanilla extract for filling
  • pinch of salt for filling
  • optional: cinnamon sugar for topping

Instructions

  1. Reduce apple cider in a saucepan until you have about 1/2 cup. Cool for 10 minutes.
  2. Preheat oven to 350°F (177°C) and line baking sheets.
  3. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. In another bowl, cream butter and sugars until smooth. Add oil, applesauce, eggs, and vanilla; mix well.
  5. Combine wet and dry ingredients along with the reduced cider.
  6. Scoop batter onto baking sheets; bake for 12-14 minutes until lightly browned.
  7. For the filling: Beat softened butter until smooth; gradually add confectioners' sugar and spices with apple cider until fluffy.
  8. Assemble by spreading filling between cooled cookies.
