- 2 cups apple cider
- 3 cups all-purpose flour

- 3/4 cup unsweetened applesauce, at room temperature
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 3/4 cup unsalted butter, softened to room temperature for filling
- 4 cups confectioners’ sugar
- 1/2 teaspoon ground cinnamon for filling
- 1/8 teaspoon ground nutmeg for filling
- 1/8 teaspoon ground ginger for filling
- 3 Tablespoons apple cider for filling
- 1 teaspoon pure vanilla extract for filling
- pinch of salt for filling
- optional: cinnamon sugar for topping
Instructions
- Reduce apple cider in a saucepan until you have about 1/2 cup. Cool for 10 minutes.
- Preheat oven to 350°F (177°C) and line baking sheets.
- In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- In another bowl, cream butter and sugars until smooth. Add oil, applesauce, eggs, and vanilla; mix well.
- Combine wet and dry ingredients along with the reduced cider.
- Scoop batter onto baking sheets; bake for 12-14 minutes until lightly browned.
- For the filling: Beat softened butter until smooth; gradually add confectioners' sugar and spices with apple cider until fluffy.
- Assemble by spreading filling between cooled cookies.
