- 2 kg apples (Fuji, Royal Gala, or Pink Lady)
- 150 g granulated sugar (for apples)
- 4 egg yolks
- 600 ml milk (whole or lactose-free)
- 50 g granulated sugar (for custard)
- 2 tsp vanilla bean paste
- 1 tbsp cornstarch
Instructions
- Preheat oven to 180°C (350°F). Peel and slice apples; toss with sugar, salt, and cornstarch.
- Spread apples in a baking dish and bake for about 45 minutes until tender.
- In a saucepan, whisk egg yolks, cornstarch, sugar, and salt. Gradually add milk while whisking.
- Heat over medium-low until thickened, then stir in vanilla bean paste.
- Layer half of the baked apples in a serving dish, followed by half of the custard; repeat layers.
- Chill for at least one hour before serving.
