Ingredients
- 1 jar quartered artichoke hearts (12 oz.)
- 3 medium tomatoes
- ¼ cup diced red onion
- 1 clove garlic
- 2–3 teaspoons jarred capers (drained)
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
- 2 tablespoons fresh parsley (finely chopped)
Instructions
- Dice the tomatoes into small pieces and add them to a medium mixing bowl.
- Finely chop the red onions, basil, and mince the garlic; combine them with the tomatoes.
- Drain and finely dice the artichoke hearts; add them to the bowl.
- Drain and measure out capers; mix them in along with salt and pepper to taste.
- Toss all ingredients until well combined. Serve immediately or chill for enhanced flavor.
