- 1-inch piece of ginger, grated
- 1 large tomato, pureed
- 1 cup beef broth
Instructions
- Combine all spices in a small bowl to create the Madras spice mix.
- Heat oil in a large deep pan and sauté onions until golden brown.
- Add garlic, ginger, and optional dried chilies; stir until fragrant.
- Brown the beef pieces in the pan for about 5-7 minutes.
- Add the spice mix and toast briefly before adding pureed tomato and broth.
- Simmer on low heat for 60-75 minutes until beef is tender.
- Adjust seasoning and serve garnished with fresh cilantro.
