Instructions
- In a large pot or Dutch oven over medium heat, combine vegetable oil and flour to create a roux. Stir continuously until it reaches a deep brown color (20-30 minutes).
- Add diced onions, bell peppers, and celery to the roux; sauté until soft.
- Incorporate sliced sausage and chicken thighs; cook until browned. Add minced garlic and sauté for an additional minute.
- Mix in Cajun seasoning and thyme; pour in chicken broth while stirring. Bring to a boil then reduce heat. Simmer uncovered for about 45 minutes.
- Add shrimp and cook until pink (about 5 minutes). Adjust seasoning as needed.
