Ingredients
- 1 slice whole grain or sourdough bread
- 1 ripe avocado, mashed
- 2 eggs
- 1 tsp butter or olive oil
- 46 cherry tomatoes, halved
- 23 fresh basil leaves, chopped
- Salt & cracked black pepper to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Toast the bread until golden brown.
- In a frying pan over low heat, melt butter or heat olive oil.
- Crack eggs into a mixing bowl and whisk lightly. Pour into the pan and stir gently with a spatula until soft and fluffy.
- Spread the mashed avocado over the toasted bread, pile on scrambled eggs, add halved cherry tomatoes on top, and sprinkle with basil.
- Season with salt and cracked black pepper before serving warm.
