Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine ground chicken, ricotta, Parmesan, breadcrumbs, minced garlic, Italian seasoning, parsley, egg, salt, and pepper. Mix gently.
- Shape into 12-16 meatballs and place on the baking sheet.
- Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (74°C).
- For the sauce: Sauté garlic in butter, add spinach until wilted, then stir in heavy cream, Parmesan, nutmeg, salt, and pepper until thickened.
- Gently add baked meatballs to the sauce and simmer briefly before serving.
