  • 1 large shallot
  • 3 garlic cloves
  • 1 small lemon
  • ¼ cup ripe green olives
  • 2 tablespoons capers
  • assorted spices (garlic powder, onion powder, smoked paprika, dried oregano, dried tarragon)
  • fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry and pound to an even thickness of about ¾ inch for uniform cooking.
  3. In a baking dish, mix together the cherry tomatoes, shallot, garlic, lemon slices, olives, and capers with 1 tablespoon of olive oil and kosher salt.
  4. In a bowl, whisk spices with salt and pepper; brush the chicken with remaining olive oil and coat with spice mixture.
  5. Place seasoned chicken atop the vegetable mix and bake for about 18 minutes.
  6. Switch to broil for an additional 2-4 minutes until golden brown and cooked through (165°F internal temperature).
  7. Let rest for 5 minutes before serving; garnish with parsley.
