- 4 boneless, skinless chicken breasts (about 8 ounces each)
- 3 tablespoons olive oil
- 1 pint cherry tomatoes
- 1 large shallot
- 3 garlic cloves
- 1 small lemon
- ¼ cup ripe green olives
- 2 tablespoons capers
- assorted spices (garlic powder, onion powder, smoked paprika, dried oregano, dried tarragon)
- fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry and pound to an even thickness of about ¾ inch for uniform cooking.
- In a baking dish, mix together the cherry tomatoes, shallot, garlic, lemon slices, olives, and capers with 1 tablespoon of olive oil and kosher salt.
- In a bowl, whisk spices with salt and pepper; brush the chicken with remaining olive oil and coat with spice mixture.
- Place seasoned chicken atop the vegetable mix and bake for about 18 minutes.
- Switch to broil for an additional 2-4 minutes until golden brown and cooked through (165°F internal temperature).
- Let rest for 5 minutes before serving; garnish with parsley.
