  • 350g milk
  • 2 eggs

  • 30g cornstarch
  • 1 tbsp vanilla extract

Instructions

  1. Prepare the crust by mixing flour, milk powder, salt, and sugar. Cut in butter until crumbly. Add egg and vanilla, mix until smooth. Refrigerate for 30 minutes.
  2. Preheat the oven to 350°F (175°C).
  3. Soak tapioca pearls in water for 30 minutes; drain.
  4. In a saucepan over medium heat, combine soaked tapioca and milk; cook until pearls are translucent.
  5. Whisk together eggs, sugar, cornstarch, and vanilla in a bowl. Gradually add hot tapioca mixture while whisking.
  6. Return to saucepan; cook on low until thickened.
  7. Roll out chilled dough into a greased baking dish; pour custard over crust.
  8. Brush edges with beaten egg and bake for 45-55 minutes until set.
