Instructions
- Whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch in a medium bowl; set aside.
- In a stand mixer, cream butter with granulated and brown sugars until light and fluffy (2-3 minutes).
- Incorporate the egg, egg yolk, and vanilla extract until smooth.
- Gradually mix in dry ingredients on low speed until just combined; avoid overmixing.
- Fold in semi-sweet and milk chocolate chips along with chopped dark chocolate.
- Chill dough for at least 1 hour or up to 24 hours.
- Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
- Scoop large balls of dough (about 1/3 cup each) onto the prepared sheet, spaced about 3 inches apart.
- Bake for 15-18 minutes until edges are set but centers look slightly underbaked; cool on tray before transferring to wire racks.
