Instructions
- Preheat your oven to 400°F.
- Rinse and dry the cherry tomatoes, then halve and place them on a large rimmed baking sheet.
- Drizzle with olive oil and balsamic vinegar, then sprinkle with minced garlic, thyme, salt, and pepper. Toss gently to coat.
- Roast in the oven for 30 to 40 minutes until wilted and juices are thickened.
- Serve warm over cooked pasta or as a side dish.
