Instructions
- Preheat oven to 400°F (200°C).
- Chop sweet potatoes and onion; toss with olive oil, salt, garlic powder, and chipotle powder on a sheet pan.
- Roast for 20 minutes.
- Add broccoli and chicken brushed with BBQ sauce; roast for an additional 15-20 minutes until chicken is cooked through.
- Shred chicken and mix with remaining BBQ sauce.
- Assemble bowls by dividing the chicken and veggies evenly.
