Instructions
- Preheat oven to 375°F and prepare a baking sheet with nonstick oil or parchment paper.
- Slice bell peppers in half and then into six equal pieces, laying them on the baking sheet inside up.
- In a skillet, cook ground beef or turkey until crumbled; add taco seasoning and water, mixing well.
- Stir in black beans, corn, and sliced jalapeños if desired.
- Spoon the mixture over each bell pepper piece and top with cheese.
- Bake for about 10 minutes until cheese melts; serve warm with desired toppings.
