- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 Tbsp ground cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp ground cloves
- 1 cup oil
- 1¼ cups granulated sugar
- 1 cup brown sugar
- 1 Tbsp vanilla extract
- 3 eggs
- 2½ cups grated zucchini
- 1 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees F and grease a 9" loaf pan.
- In a medium bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- In a large bowl, mix oil, granulated sugar, brown sugar, vanilla extract, and eggs until well combined.
- Gradually add dry ingredients to wet mixture, folding in grated zucchini and walnuts until just combined.
- Pour batter into prepared pan and bake for 50–60 minutes until golden brown and a toothpick comes out clean.
- Allow to cool before slicing.
