Instructions
- Wash and cut the vegetables: green bell pepper (1-inch pieces), cucumber (quarter slices), roma tomatoes (1-inch pieces), and red onion (thinly sliced).
- In a large bowl, combine prepared vegetables with kalamata olives and feta cheese.
- Prepare the dressing by whisking together olive oil, red apple vinegar, minced garlic, oregano, dill, salt, and pepper in a separate bowl.
- Drizzle dressing over the salad mixture and gently toss to coat.
- Garnish with fresh parsley before serving.
