Ingredients
- 500 g sunflower oil
- 6 shallots, thinly sliced
- 10 garlic cloves, thinly sliced
- 3 tbsp chili flakes
- 1 tbsp chili powder
- 1 cinnamon stick
- 1 star anise
- 2 bay leaves
- 2 tbsp brown sugar
- Pinch of salt
- 2 tbsp sesame seeds
- 2 tbsp soy sauce
Instructions
- Heat sunflower oil in a deep pan over medium heat. Add sliced shallots and garlic; fry at 120°C (248°F) until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
- In a heatproof bowl, mix chili flakes, chili powder, cinnamon stick, star anise, bay leaves, brown sugar, and salt.
- Once the oil has cooled slightly, pour it over the spice mixture and stir well.
- Add back the fried shallots and garlic into the bowl.
- Mix in soy sauce and sesame seeds until evenly distributed.
- Allow the mixture to cool completely before transferring it into sterilized jars for storage.
