  • 500 g sunflower oil
  • 6 shallots, thinly sliced
  • 10 garlic cloves, thinly sliced
  • 3 tbsp chili flakes
  • 1 tbsp chili powder
  • 1 cinnamon stick
  • 1 star anise
  • 2 bay leaves
  • 2 tbsp brown sugar
  • Pinch of salt
  • 2 tbsp sesame seeds
  • 2 tbsp soy sauce

Instructions

  1. Heat sunflower oil in a deep pan over medium heat. Add sliced shallots and garlic; fry at 120°C (248°F) until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
  2. In a heatproof bowl, mix chili flakes, chili powder, cinnamon stick, star anise, bay leaves, brown sugar, and salt.
  3. Once the oil has cooled slightly, pour it over the spice mixture and stir well.
  4. Add back the fried shallots and garlic into the bowl.
  5. Mix in soy sauce and sesame seeds until evenly distributed.
  6. Allow the mixture to cool completely before transferring it into sterilized jars for storage.
