Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.

- In another bowl, combine the oil, sugars, and eggs until smooth. Stir in applesauce (or yogurt) and grated zucchini.
- Gently fold the wet ingredients into the dry ingredients until just combined.

- Pour the batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
- Let cool for about 10 minutes before transferring to a wire rack.
