Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch baking pan.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the oil, brown sugar, granulated sugar, eggs, applesauce (or yogurt), and vanilla until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined. Fold in the grated zucchini gently.
- Pour the batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
- Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
