- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup salted butter (diced)
- 5 Tablespoons butter (softened)
- 1/3 cup brown sugar
- 1 cup granulated sugar
- 16 oz. cream cheese (softened)
- 2 large eggs
- 4 Tablespoons milk
- 2 Tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 350°F, line a 13 x 9 inch baking pan with aluminum foil, and spray with non-stick cooking spray.
- For the crust, mix flour and powdered sugar in a bowl, add butter, and press into the prepared pan.
- Bake crust for about 15 minutes until lightly golden, then let cool.
- In another bowl, combine cream cheese, sugars, softened butter, and vanilla; mix until smooth.
- Add eggs one at a time, mixing well after each addition; then stir in milk and lemon juice.
- Gently fold in blueberries before pouring the filling over the crust.
- Bake for an additional 30-35 minutes until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator for at least two hours.
