  • 2 Tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F, line a 13 x 9 inch baking pan with aluminum foil, and spray with non-stick cooking spray.
  2. For the crust, mix flour and powdered sugar in a bowl, add butter, and press into the prepared pan.
  3. Bake crust for about 15 minutes until lightly golden, then let cool.
  4. In another bowl, combine cream cheese, sugars, softened butter, and vanilla; mix until smooth.
  5. Add eggs one at a time, mixing well after each addition; then stir in milk and lemon juice.
  6. Gently fold in blueberries before pouring the filling over the crust.
  7. Bake for an additional 30-35 minutes until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator for at least two hours.
