Instructions
- Preheat your oven to 350°F (175°C) and line a 9-inch cake pan with parchment paper.
- Arrange peach wedges in the pan and sprinkle with cinnamon.
- For the caramel, combine water and sugar in a saucepan; heat until light brown. Add bourbon, then pour over peaches.
- In a bowl, beat butter and sugar until fluffy; add eggs one at a time, mixing well after each addition.
- Combine dry ingredients in another bowl; gradually mix into the wet batter until just combined.
- Pour batter over peaches and bake for 30–35 minutes or until golden brown.
- Cool for 15–30 minutes before serving.
