Instructions
- Measure and gather all ingredients.
- In a bowl, mix together flour, sugar, baking powder, baking soda, salt, and nutmeg.
- In another bowl, whisk together buttermilk, eggs, vanilla extract, and melted butter.
- Combine wet and dry mixtures gently until just mixed; some lumps are okay.
- Allow the batter to rest for 10-15 minutes.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry for about 2-3 minutes on each side until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving warm.
