Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into a greased 9×9-inch baking dish and bake for 10 minutes.
- In a separate bowl, beat cream cheese and sugar until smooth; add eggs one at a time. Mix in vanilla extract, sour cream, and butterscotch chips until just combined.
- Pour the filling over the crust and bake for 25-30 minutes, or until edges are set and the center is slightly jiggly.
- Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
