Ingredients
- 4 boneless, skinless chicken breasts (about 2 lbs)
- 1 pound fresh asparagus, trimmed
- 1 cup creamy Caesar dressing
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt (optional)
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
- Season chicken breasts with garlic powder, onion powder, black pepper, and salt. Place in the baking dish with asparagus spears around them.
- Spread Caesar dressing over the chicken and sprinkle with ¾ cup Parmesan cheese (reserve ¼ cup). If desired, add shredded mozzarella.
- Cover with foil and bake for 20 minutes. Remove foil, add remaining Parmesan cheese, and bake for another 15–20 minutes until the chicken is cooked through (165°F) and asparagus is tender.
- Let rest for 5 minutes before serving.
