- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream
- 3 tablespoons flour
- 1 tablespoon honey
- 2 teaspoons Cajun seasoning (plus more for seasoning chicken)
- 3 cloves garlic (minced)
- 10 oz. Rotel diced tomatoes with green chilies
- ¾ cup cheddar jack cheese (shredded)
- Olive oil and butter for cooking
Instructions
- Season chicken breasts with Cajun seasoning and dredge in flour.
- Heat olive oil and butter in a skillet over medium-high heat; cook chicken until browned, about 6-7 minutes per side. Remove from the skillet.
- In the same skillet, sauté minced garlic until fragrant, then whisk in broth, cream, honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes. Simmer until thickened.
- Return chicken to the skillet with the sauce, add diced tomatoes (reserve juice), top with cheese, cover until melted.
- Drizzle lime juice over the dish before serving and garnish with fresh cilantro.
