  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • 3 tablespoons flour
  • 1 tablespoon honey
  • 2 teaspoons Cajun seasoning (plus more for seasoning chicken)
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • ¾ cup cheddar jack cheese (shredded)
  • Olive oil and butter for cooking

Instructions

  1. Season chicken breasts with Cajun seasoning and dredge in flour.
  2. Heat olive oil and butter in a skillet over medium-high heat; cook chicken until browned, about 6-7 minutes per side. Remove from the skillet.
  3. In the same skillet, sauté minced garlic until fragrant, then whisk in broth, cream, honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes. Simmer until thickened.
  4. Return chicken to the skillet with the sauce, add diced tomatoes (reserve juice), top with cheese, cover until melted.
  5. Drizzle lime juice over the dish before serving and garnish with fresh cilantro.
