  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the linguine in salted boiling water until al dente (9-10 minutes). Reserve ¼ cup pasta water.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear the chicken for 7-8 minutes until golden brown. Add half of the garlic during the last minute.
  4. Remove chicken and keep warm. In the same skillet, melt remaining butter and sauté remaining garlic until fragrant.
  5. Stir in heavy cream and cheeses until smooth. Season to taste.
  6. Toss linguine in the sauce, adding reserved pasta water if needed for consistency.
  7. Serve topped with seared chicken and garnish with parsley.
