Instructions
- Cut both apples into matchstick pieces and place them in a mixing bowl. Drizzle lemon juice over the apples to prevent browning.
- Allow the apples to soak in lemon juice for about 5 minutes.
- In a large mixing bowl, combine matchstick carrots, finely diced onion, and dried cranberries.
- Add soaked apples to the vegetable mixture.
- In the same bowl, mix together vanilla yogurt and mayo; add sugar, salt, and pepper.
- Stir all ingredients until well combined and coated with dressing.
- Gently fold in drained mandarin segments.
- Cover and refrigerate for at least three hours before serving.
