Instructions
- Wash all vegetables thoroughly.
- Chop celery into bite-sized pieces; halve cherry tomatoes; dice cucumber; thinly slice red onion.
- In a large mixing bowl, combine celery, tomatoes, cucumber, red onion, and parsley.
- In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper until well blended.
- Pour dressing over the salad mixture and toss gently to coat evenly.
- Chill for at least one hour before serving to enhance flavors.
