Instructions
- Slice zucchinis in half lengthwise to create four 'steaks.' Score the flesh in a crosshatch pattern and sprinkle with salt. Let sit for 15 minutes.
- In a skillet over medium heat, sauté garlic and red pepper flakes in 2 tablespoons olive oil until fragrant. Set aside.
- Heat remaining olive oil in the skillet and pat zucchini dry. Sear each half flesh side down until golden brown (about 2-3 minutes). Transfer to a baking sheet.
- Brush zucchini with garlic oil and bake at 425°F for 8-10 minutes until tender. Top with mozzarella and Parmesan cheese.
- Broil for an additional 2-3 minutes until cheese is melted and golden brown. Serve garnished with fresh basil.
