- 1 cup shredded mozzarella cheese
- 3 flour tortillas (8-inch)

- Fresh parsley for garnish
Instructions
- Wash and dice the tomato, chop the red onion finely, and rinse the spinach.
- In a bowl, mix feta cheese, mozzarella cheese, diced tomato, red onion, spinach, and oregano until well combined.
- Spread half of a tortilla with an equal portion of the cheese mixture and fold it over.
- Heat a non-stick skillet over medium heat and cook each quesadilla for about 3–4 minutes on each side until golden brown.
- Slice into wedges and garnish with fresh parsley before serving.
