- 2 cups whole milk
- 1 ½ cups mild cheddar cheese, shredded

Instructions
- Preheat oven to 400°F and lightly coat an 8×8-inch casserole dish with nonstick spray.
- Layer the sliced potatoes and onions in the dish, alternating between them for even distribution.
- In a medium saucepan, melt butter over medium heat. Whisk in flour and salt for about one minute.
- Gradually add the milk while stirring until thickened. Stir in cheddar until melted and smooth.
- Pour cheese sauce over the layered potatoes and cover with foil.
- Bake for 85-90 minutes until potatoes are fork-tender.
- Optionally broil for a few minutes until golden brown on top before serving.
