Instructions
- Brown the butter in a saucepan over medium heat until golden brown; chill for 30 minutes.
- Blot pumpkin puree with paper towels to remove excess moisture.
- Combine brown butter with sugars in a stand mixer; mix well.
- Add pumpkin puree, egg yolk, molasses, and vanilla; blend until combined.
- In another bowl, whisk together dry ingredients; gradually add to wet mixture.
- Chill dough for 30 minutes.
- Preheat oven to 350°F and prepare baking sheets lined with parchment paper.
- Mix granulated sugar and cinnamon for coating; scoop dough into balls and coat in the mixture.
- Bake for 9-10 minutes until edges are set; cool before serving.
