- 2 slices of sourdough or artisan bread
- 1/2 ripe avocado, mashed
- 1/2 cup cooked shredded chicken
- 2 slices of cheddar or Monterey Jack cheese
- 1 tbsp mayonnaise (optional)
- 1 tsp lemon juice
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- In a small bowl, mash the avocado. Stir in lemon juice, salt, and pepper until smooth.
- Spread mayonnaise on one side of each slice of bread. On one slice, layer the avocado mixture, followed by shredded chicken and cheese. Top with the other slice of bread (mayo side out).
- Heat a skillet over medium heat and melt the butter. Grill the sandwich for 3–4 minutes per side until golden brown and cheese melts.
- Remove from heat, slice in half, and serve hot.
