- 3 cups chicken broth or water
Instructions
- Marinate the chicken: In a bowl, mix olive oil, lime juice, fajita seasoning, smoked paprika, cumin, salt, and pepper. Add chicken strips and coat well. Let marinate for at least 30 minutes.
- Cook the rice: Bring broth or water to a boil in a pot. Add rice and salt (if using water). Reduce heat and simmer until tender.
- Sauté vegetables: Heat olive oil in a skillet over medium heat. Add onions and cook until translucent. Stir in bell peppers and cook until softened.
- Cook the chicken: In the same skillet, add marinated chicken to the vegetables and sauté until cooked through.
- Assemble bowls: Spoon rice into serving bowls and top with sautéed veggies and chicken.
