Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, and pepper. Mix gently until just combined.
- Shape the mixture into small meatballs (about one inch in diameter) and arrange on a lined baking sheet.
- Bake for about 20 minutes or until browned and cooked through.
- Meanwhile, melt butter in a skillet over medium heat. Add lemon juice and chicken broth; bring to a simmer. Stir in capers and cook for an additional 3-5 minutes.
- Once the meatballs are done baking, transfer them to the skillet and coat in the sauce before serving.
