Ingredients
- 1 lb chicken breasts (skinless, boneless)
- 2 tablespoons taco seasoning
- 6 cups fresh spinach (shredded)
- 3 tomatoes (diced)
- 4 green onions (chopped)
- 1/4 cup red onion (chopped)
- 1 red bell pepper (thinly sliced)
- 1/2 cup shredded cheddar cheese
- 1/2 cup tortilla chips (crushed)
- 1/2 cup Ranch dressing
- 1/2 cup Greek yogurt mixed with taco seasoning and chopped fresh cilantro
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a skillet over medium heat, add vegetable oil and cook seasoned chicken breasts for 6–7 minutes on each side until cooked through. Let cool before slicing.
- While the chicken cools, chop the tomatoes, green onions, red onion, and slice the red bell pepper.
- In a large mixing bowl, combine spinach, diced tomatoes, chopped green onions, chopped red onion, and sliced red bell pepper.
- Add sliced chicken to the salad mixture along with shredded cheddar cheese and crushed tortilla chips.
- Drizzle with either Ranch dressing or Greek yogurt mixed with taco seasoning just before serving.
- Garnish with fresh parsley and serve immediately.
