  • 1 lb chicken breasts (skinless, boneless)
  • 2 tablespoons taco seasoning
  • 6 cups fresh spinach (shredded)
  • 3 tomatoes (diced)
  • 4 green onions (chopped)
  • 1/4 cup red onion (chopped)
  • 1 red bell pepper (thinly sliced)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup tortilla chips (crushed)
  • 1/2 cup Ranch dressing
  • 1/2 cup Greek yogurt mixed with taco seasoning and chopped fresh cilantro
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a skillet over medium heat, add vegetable oil and cook seasoned chicken breasts for 6–7 minutes on each side until cooked through. Let cool before slicing.
  2. While the chicken cools, chop the tomatoes, green onions, red onion, and slice the red bell pepper.
  3. In a large mixing bowl, combine spinach, diced tomatoes, chopped green onions, chopped red onion, and sliced red bell pepper.
  4. Add sliced chicken to the salad mixture along with shredded cheddar cheese and crushed tortilla chips.
  5. Drizzle with either Ranch dressing or Greek yogurt mixed with taco seasoning just before serving.
  6. Garnish with fresh parsley and serve immediately.
