- 1 lb boneless chicken thigh (cut into bite-sized pieces)
- 1 medium zucchini (sliced)
- 1/4 cup light soy sauce
- 1 tablespoon oyster sauce
- 3 garlic cloves (smashed)
- Cooking oil

Instructions
- Marinate the chicken: In a mixing bowl, combine the chicken with light soy sauce, cornstarch, sesame oil, sugar, vinegar (if using), and smashed garlic. Allow to marinate for at least 30 minutes.
- Heat the pan: In a wok or large frying pan, heat cooking oil over medium-high heat.
- Cook the chicken: Add the marinated chicken along with all marinade ingredients into the pan. Stir-fry for about 2 minutes until the chicken is no longer translucent and remove from heat.
- Stir-fry zucchini: In the same pan, add more oil if needed, then add sliced zucchini and stir-fry for about 5 minutes until tender.
- Combine everything: Return the cooked chicken to the pan with the zucchini, add oyster sauce, and cook together for an additional 2-3 minutes.
- Serve hot and garnish with fresh parsley.
