  • Total Time: 40 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 1 lb boneless chicken thigh (cut into bite-sized pieces)
  • 1 medium zucchini (sliced)
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 3 garlic cloves (smashed)
  • Cooking oil
  • Fresh parsley (for garnish)

Instructions

  1. Marinate the chicken: In a mixing bowl, combine the chicken with light soy sauce, cornstarch, sesame oil, sugar, vinegar (if using), and smashed garlic. Allow to marinate for at least 30 minutes.
  2. Heat the pan: In a wok or large frying pan, heat cooking oil over medium-high heat.
  3. Cook the chicken: Add the marinated chicken along with all marinade ingredients into the pan. Stir-fry for about 2 minutes until the chicken is no longer translucent and remove from heat.
  4. Stir-fry zucchini: In the same pan, add more oil if needed, then add sliced zucchini and stir-fry for about 5 minutes until tender.
  5. Combine everything: Return the cooked chicken to the pan with the zucchini, add oyster sauce, and cook together for an additional 2-3 minutes.
  6. Serve hot and garnish with fresh parsley.
