Instructions
- In a bowl, mix chicken cubes with olive oil, chipotle powder, garlic powder, salt, and pepper. Toss until well coated.
- Heat a grill or skillet over medium-high heat. Cook chicken for 5-7 minutes until fully cooked.
- In another bowl, whisk together mayonnaise, sour cream, cilantro, lime juice, minced garlic, salt, and pepper until smooth.
- To serve, divide cooked rice into bowls and top with grilled chicken, corn kernels, cucumber slices, and drizzle with creamy sauce.
