Instructions
- In one bowl, whisk together almond flour, protein powder, and salt.
- In another bowl, combine cashew butter, milk, honey or maple syrup, and vanilla until smooth.
- Mix the wet ingredients into the dry ingredients until well combined.
- Fold in mini chocolate chips evenly throughout the mixture.
- Adjust consistency by adding more milk gradually if needed.
- Roll mixture into 1-inch balls and place them on a parchment-lined plate.
- Chill in the refrigerator for at least 30 minutes to firm up.
- Melt chocolate chips and coconut oil in a microwave-safe bowl until smooth.
- Dip each ball in melted chocolate; tap off excess before placing back on parchment.
- Sprinkle with extra mini chocolate chips while still wet and chill again until set.
