Ingredients
- 2 sticks unsalted butter (room temperature)
- ½ cup granulated sugar
- ¾ cup brown sugar
- 2 large eggs (room temperature)
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 2 cups semi-sweet chocolate chips
- 1 package (6-8 count) Peeps marshmallows
- Easter sprinkles
Instructions
- Cream butter and sugars in a stand mixer until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then add vanilla extract.
- Sift and combine flour, cornstarch, salt, baking soda, and baking powder; mix into wet ingredients until just combined.
- Fold in chocolate chips and sprinkles.
- Portion out dough using a scoop; flatten slightly and place a Peep in the center before enclosing it.
- Chill dough balls for at least two hours.
- Preheat oven to 375°F (190°C); line baking sheets with parchment paper.
- Bake for 14-16 minutes until edges are golden; cool on trays for 20-30 minutes.
