- 3 tablespoons unsalted butter
- 1 package (10 oz) mini marshmallows
- 1/2 teaspoon vanilla extract
- 1 package (3 oz) cherry Vegan Gelatin powder
- 6 cups Rice Krispies cereal
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil (for melting chocolate)
Instructions
- Grease a 9×13-inch baking dish or line it with parchment paper.
- In a large saucepan over medium heat, melt the butter. Add mini marshmallows and stir until smooth.
- Remove from heat; mix in vanilla extract and cherry gelatin powder. Fold in Rice Krispies until evenly coated.
- Press mixture firmly into the prepared baking dish and let cool completely.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 30-second intervals until smooth.
- Cut cooled treats into squares, dip each piece halfway into melted chocolate, and place on a parchment-lined tray to set.
