- 3 ¼ cups bread flour
- 1 cup whole milk (cold)
- 2 ¼ tsp active dry yeast
- ¼ cup granulated sugar

- 3 tbsp unsalted butter (softened)
- 1 cup European-style butter (cold)
- 8 oz dark chocolate bars (chopped)
Instructions
- In a mixing bowl, combine flour, sugar, salt, and yeast. Mix in cold milk and softened butter until a shaggy dough forms. Knead for 5–7 minutes until smooth, then chill for at least 2 hours.
- Create a butter block by pounding cold European-style butter between parchment sheets into a rectangle approximately 7×5 inches.
- Encase the butter block in the chilled dough and roll out to about 10×20 inches. Fold into thirds like a letter and refrigerate for 30 minutes; repeat this step three times.
- Roll out the dough again to about 10×20 inches, cut into triangles, place chocolate pieces at the base of each triangle, roll tightly, and let proof for about 2–3 hours.
- Brush with egg wash and bake at 400°F (200°C) for 18–22 minutes until golden brown.
