Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and granulated sugar until fluffy. Add the egg and vanilla; mix well.
- In another bowl, combine flour, cocoa powder, baking soda, and salt; gradually add this dry mixture to the creamed mixture until combined.
- Scoop tablespoon-sized portions onto a lined baking sheet, spacing them two inches apart. Bake for 10 minutes or until set; cool on a rack.
- For the mint frosting, beat together powdered sugar, butter, milk, mint extract, and optional food coloring until smooth; spread over cooled cookies.
- For the ganache topping, melt chocolate chips with oil until smooth; drizzle over frosted cookies.
