Ingredients
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 cup heavy cream
- 12 oz semisweet chocolate, melted and cooled
- 1/4 cup powdered sugar
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (180°C) and grease a 9-inch springform pan.
- Mix chocolate cookie crumbs with melted butter; press into the bottom of the springform pan.
- Bake crust for 10 minutes; let cool.
- In a bowl, beat cream cheese until smooth; add sugar and vanilla.
- Whip heavy cream until stiff peaks form.
- Fold melted chocolate into cream cheese mixture, then gently fold in whipped cream until well combined.
- Pour mousse filling over cooled crust; smooth the top with a spatula.
- Refrigerate for at least 4 hours or overnight until set.
- Remove from pan and dust with sifted powdered sugar and cocoa before serving.
