Instructions

- Roll out the dough into a rectangle and encase cold butter flattened between parchment paper.
- Chill the dough in the refrigerator for at least 30 minutes.
- Roll out the dough and fold into thirds like a letter; repeat this process two more times to create layers.
- Mix ricotta, chopped pistachios, and dark chocolate chips for the filling.
- Cut rolled dough into triangles, add filling at the base, and roll tightly into crescent shapes.
- Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 20-25 minutes until golden brown.
